Mason's Bay Area Sports Cupcakes

Cat's sister is having a baby boy soon, and they requested some San Francisco bay area sports themed cupcakes from me. With 24 cupcakes being the order and there being 3 teams, I split the 24 into 8 cupcakes per team. I'm not really a sports person, but I did some research and decided to make cupcakes with the logo, jerseys, and balls of each team.


After baking the funfetti cupcakes, I mixed up some frosting colors and began frosting the cupcakes. I stuck with a pastel tone not only because it was easier to get pastel colors with a white frosting base, but to also give it a more baby feel.


My tools. I made little frosting bags by rolling up some wax paper.


I meticulously hand-piped every cupcake. My method is a little tedious. I pipe frosting in a general shape and then reshape using a toothpick.


I've made Giants cupcakes before for Nikki. So this design wasn't anything new. This jersey was my favorite. I like the orange detail on the number.


The 49ers logo was the most difficult of the three. That SF was just difficult to get right.


The Warriors color combo was my favorite. Even if it is a little reminiscent of UCLA.


The cupcake liners are kinda fluffy, because I had doubled up on them to prevent the color of the liners from getting washed out by the cupcake itself.


They turned out to be pretty cute. Can't wait to meet you one day, Mason :)

Hidden Mickey Cake

What Mickey themed cake did I have for Alane's birthday this year? It wasn't suppose to become a theme, but she loves Mickey and it's fun challenging myself every year. Here are the Mickey cakes I've made for her over the past few birthdays. 







2011 I freaked out when I couldn't find a cake for this year, but then I remembered I was in China. Whoops!



What to do this year? It was her 25th birthday and I thought I should do something a little different.

I had a general idea. It's something I've done before for Cat's birthday one year, but I have never seen this design done before.

I vaguely planned it out in my notebook. It made more sense in my head. I wanted to embed a hidden Mickey head within the cake. It's really not as crazy as it sounds. I got the idea from iambaker. I really love her blog, and she makes these kinds of cakes all the time.


To be honest, this was the most unsure I've felt starting a cake. I usually can imagine everything from start to finish, but since this is the first time attempting this design, I just couldn't see every step clearly.

It took some time, but I finally settled on a 9x12 pan so I can cut it into smaller pieces. I started with a yellow cake mix for the cake.

I started cutting before I remembered I hadn't taken a photo of the cake out of the oven.


Next I used a third of a chocolate cake mix for the hidden chocolate Mickey center.


Once everything had cooled, I cut the yellow cake into quarters, trimmed the edges,


and leveled each one. I had a lot of scraps left over. Back when I was at Davis, I had roommates and other friends to help eat them. Now I have my family, and they are less enthused about the leftovers.


I was still unsure of how to go about the assembly, so I moved onto making the frosting. The frosting I like to make is with mascarpone cheese and heavy whipping cream. I like it because it is light and not overly sweet.


I forgot to take a photo of the frosting, but here I am mixing a spoonful of it into some crumbled chocolate cake. This helps to keep the cake together when I mold it.


After a lot of thought, I started the cake assembly. In the very bottom layer, I scooped a small spherical hole out. This is the bottom of the Mickey head.


Then I pressed the frosting and chocolate cake mixture into the hole.


It's hard to tell, but I've added another layer of cake with another hole cut out.


I continued this method until I was pretty sure I had gotten the right shape. The problem with doing this design is that you can never check until it is finally cut into. There was a lot of guessing involved.


Once I had finished all the layers, I moved onto frosting the cake.


Since the cake is fairly crumbly, I frosted a crumb coat, and placed the cake in the fridge to set a bit before continuing.


After an hour or so, I took the cake out of the fridge to give it a final frosting.


I procrastinated a bit during the day so I ended up rushing the final bit of decorating, therefore, no other process shots. I knew I was going to hand-pipe a birthday message and 24 Mickeys, but even at this point I still wasn't sure of what color I was going to use for the decorating. Ideally, I wanted black, but it is difficult to get black from white icing, and I was under a time constraint. I made attempts at making an olive green, because that's Alane's favorite color, but it kept turning out kinda ugly. Luckily I had some store-bought chocolate frosting and decided to use that instead. 


Once everything was nicely decorated, I brought the cake over to Alane's where Ronnie was already there with some birthday naan. That has apparently become a tradition.


I had Alane count the Mickeys before slicing into it.


She counted 24 Mickeys on the outside of the cake and found the 25th in the middle.


Overall, it worked out better than I had anticipated. It wasn't perfect, but I can't complain too much since I had no real game plan for this cake. I know what to do next time!

Minnie Mouse Cupcakes for Kayleigh

Cat asked me to make cupcakes for her niece's FIRST birthday. The theme for her birthday was "Couture Minnie Mouse". I knew I didn't want just one design for all the cupcakes, so I designed a few and had Cat choose her favorites.


Yellow with added food coloring, yellow plus red sprinkles, and chocolate were the cupcake flavors of choice.


I first started with the monogram "K" cupcakes. I designed the "K" by literally searching for "fancy fonts". I came across a really fancy "K" and a semi- fancy "K" and just sort of combined them. To make the little monogram piece, I chose to use pastillage (or gum paste). I kneaded and rolled the pastillage to the thickness I wanted and used an empty medicine bottle as my circle cutter and Food Writer markers to write the "K". Notice my little tester "C" in the middle hehe.


I didn't want the monogram to be just one color, so I incorporated the pink and polka dot theme into the "K". I thought it added a bit of youth to the design. It is for a one year old's birthday after all :)


 I just wished the tips of the markers were a bit finer. It was difficult controlling the thickness.


For some added whimsy, I used edible white luster dust and a clean eyeshadow brush (that kept shedding bristles like crazy. Argh.) and dusted the monogram circles. I felt like a fairy.


The luster dust gave the monograms more dimension and flair.


To make pink frosting, I added red food coloring to store-bought frosting.

With some white confetti sprinkles, also dusted with luster dust, the cupcakes were ready to be eaten! (At the party anyways.)


For the Minnie Mouse ears cupcakes, I made some chocolate ganache by using heavy whipping cream and chocolate chips.


I spread the ganache over the cupcakes and used chocolate candy melts as the ears.


The bow was the most difficult part. It was a great challenge to make them, but Minnie Mouse couldn't be without her bow! I cut bow shapes out of the pastillage using a hand made stencil and toothpick. It wasn't the best method, but it was the only way I could think of using the materials I had. After each bow was cut out, I would press them against my brush handle to let them harden in a more bow-like shape. I had to work fast, because pastillage hardens fairly quickly.


I drew on the bow details using the Food Writers.


Coloring wasn't my ideal way of going about this. I originally wanted to either dye the pastillage pink before molding them into bow shapes or paint them using food safe paint. Being that this was my first time attempting something like this, I wasn't as prepared as I should have been, so I just used what I had. The bows were also dusted with luster dust afterwards.


They still turned out to be pretty cute. I should have tried harder to smooth the edges though.


I had made other mini Minnie Mouse ears cupcakes too, but I completely forgot to take a picture of them -__-

The cute dessert table was filled with the cupcakes I had made and the chocolate dipped marshmallows, Minnie Mouse Oreos, rice krispies and brownies that Cat had made.
